This week we launched our glorious Peru Cajamarca Swiss Water Decaf coffee. A delightfully tasty single origin with plum jam flavours and a sweet milk chocolate aftertaste. It also happens to be decaffeinated!
As the many people who have requested a decaf in our range will know, we've been holding out for the right one. Decaffeination processing can often remove caffeine harshly, which drags the flavour away as well. But, after searching far and wide and tasting upwards of 20 different options - we've found the speciality decaf we were looking for.
The Peru Cajamarca is a flavourful coffee which we have roasted to a medium light colour to retain the natural sweet, jammy flavours of the bean. But, when it comes to processing, what is Swiss Water Decaffeination?
This process is the craft of using pure water to gently remove caffeine. It takes place in small batches which means the process is used only for small lots of speciality coffee. It starts by soaking green coffee in clean, local water. Once hydrated, a Green Coffee Extract (GCE) is introduced to the beans and caffeine removal begins. The caffeine ventures out on it's own, away from the beans and into the GCE until the ratio of soluble compounds in the GCE to the compounds in the coffee each a balance point. Caffeine and GCE flow continuously through carbon filters until all the caffine is trapped and separated. The GCE is then refreshed so that it can be used again and again to remove more caffeine
The beans are then continuously monitored in caffeine level and GCE flow, resulting in a 99.9% caffeine free coffee which has not sacrificed flavour.
